In the kitchen: Rice Bowl.

It's no secret that I like to eat healthy. I was feeling inspired {thanks, Erica!} and came up with a tasty little dish that I wanted to share with you. This recipe is fast, healthy, and good! Enjoy.

Ingredients:
1 cup brown rice
1 cup chopped lettuce
1/2 cup canned black beans
1/3 cup corn {I use Trader Joe's roasted corn. Thanks again, Erica!}
1 tbsp. sour cream {I use vegan sour cream}
chopped cilantro, to taste

How to make it:
Heat beans, rice, and corn in the microwave.
Add lettuce, sour cream, and chopped cilantro.
Mix, and eat.

See? So fast & easy. A great source of fiber, too!

I plan on making some salsa to add to this recipe and could see throwing in some grilled onions & peppers as well. Tons of options.

The Chipotle equivalent of this recipe has almost 500 calories and 840 mg. of sodium. And that's without chicken. Add in some guacamole, chicken, and cheese and you're looking at 900 calories and 1500 mg. of sodium. Gross.
